Mahshi Chicken (or Djaj Mahshi). In Arabic, Mahshi means "stuffed."
· The Filling: The rice is typically mixed with ground meat (like lamb or beef), herbs, spices (like cinnamon and allspice), and sometimes nuts like pine nuts or almonds.
· The Cooking: The stuffed chicken is usually rubbed with spices or a tomato paste mixture and then roasted in the oven until the skin is crispy and the rice inside is fully cooked and has absorbed all the chicken juices.
