Chicken Makmoura Ingredients



Dough Ingredien

4 cups all-purpose flou

1 cup whole wheat flou

1/2 cup sesame seed

1/2 cup nigella seed

A pinch of sal

Light wate

2 cups olive oi


Filling Ingredien

3 cups olive oi

4 boneless, skinless chicken breasts, cube

8 chopped onion

1 tablespoon sal

1 teaspoon black peppe

A pinch of cumi

1/4 teaspoon cardamo

1 teaspoon turmeri


Steps to Prepare Chicken Makmou


Dough Preparation Ste


Take a round baking dish and line it with a large piece of aluminum foil, ensuring it covers the edges and extends to enclose the chicken makmour


In a bowl, combine the flour, sesame seeds, nigella seeds, salt, and oil. Mix well. Gradually add water until the dough is soft and no longer sticky. Let it rest for 10 minutes, then divide it into medium-sized ball


Take one ball and brush it with olive oil. Flatten it with your hand until it is thin and roun


Place the dough on the edge of the baking dish, half on top and half on the outsid


Repeat the process until the bottom is covered, then place a ball in the cente


For the filling: Heat oil in a deep pot over medium heat. Add the onions and chicken and saut


Add salt, pepper, cumin, cardamom, and turmeric, and cook until the chicken is cooked throug


Spread a layer of the filling over the dough and drizzle with a little olive oi


Take a ball of dough and flatten it with your hand using the oi


Place the flattened dough ball over the fillin


Add another layer of filling and cover it with the dough in the same way. Repeat the proces


Fold the outer edges of the dough inwards and make slits in the dough with a knif


Drop a little more olive oil over the dough and cover the chicken casserole with aluminum foil. Preheat the oven to 160°C (325°F) and bake for 2 hour


Remove the chicken casserole from the oven, cut it into triangles, and serve ho
