 Stuffed Grape Leaves (Yaprak Sarma) Ingredients: 250 g ground meat 1 onion, finely chopped 1 cup rice 1 cup fine bulgur (for meatballs) 1 tomato, grated 1 tablespoon tomato paste Spices (optional): black pepper, dried mint, red pepper flakes A pinch of parsley, chopped Grape leaves 2 tablespoons olive oil For the sauce: 1 tablespoon tomato paste 3 cups water Butter Instructions: In a large bowl, combine the ground meat, chopped onion, rice, bulgur, grated tomato, tomato paste, spices, and parsley. Mix everything thoroughly. Lay out the grape leaves. Place about 1 teaspoon of the filling onto each leaf. Fold the sides inward and roll tightly into a cylindrical shape. Arrange the stuffed grape leaves snugly in a pot. In a separate pan, melt some butter and mix it with 1 tablespoon of tomato paste.  Water Pastry (Su Böreği) Filling: We dice two onions and put them into a pan with a little oil. After sautéing them lightly, we add 750 grams of ground meat. We cook the mixture well. Then we add salt, red pepper, and finely chopped parsley, and turn off the heat. Dough: For the dough, we use 8 eggs, salt, water, and flour. We mix and knead everything well. Then we divide the dough into pieces and let it rest for about half an hour. After that, we roll it out as shown in the pictures.
